Alder is famous in the Pacific Northwest for smoking salmon, this mild wood is the chef's smoke of choice when looking to create a delicate smoky flavour with a hint of sweetness. Excellent with all fish, seafood, pork, poultry and light-meat game birds and vegetables.

Packed in re-sealable one pint containers (Our new tubs are 1 Imperial Pint = 20 fl oz = 560ml) – NB: Volume when packed and contents may settle in transit
These can be used with our smokers or on the Barbecue to flavour food - Simply sprinkle onto coals just before cooking the food or near the end of the cooking time - Can be pre-soaked in water for slower burning and/or placed in an old baked bean or sardine tin sat upon the coals
